木挽町の竹葉亭には、茶室作りの良い離れがあります。しっかりと打ち水がされた中庭を通りこの離れに座り障子からはいる柔らかな薄日のなかでいただくうなぎはまさに絶品。
金額、そして希少価値といういみで、間違いなく最上のおもてなしといえます。
ところが、これが常に「最上」ということはできません。
ここに「おもてなし」の難しさがあります。
例えば、この離れには座椅子はありません。畳の上に座布団が引かれており、その上に座る事になります。
椅子での生活に慣れた人、特に外国の方には畳の上にそのまま座って食事をすることは決して楽ではないかもしれません。
そうなると、この「おもてなし」は「最上」どころか失敗とも言えなくはないでしょうか。
つまり、必ずしも高額で希少価値が高い事が「最上」のおもてなし、サービスとはいえないことがわかります。
「おもてなし」は心配りの連続であり、配りすぎてなお及ばざると言っても過言ではないかもしれません。
以前読んだ本「炭屋 おもてなしはお茶の心で」という本においても、老舗旅館が「おもてなし」に関して心を砕き続けている事がしっかりと書かれていました。
日本でサービスを提供する場合、常にこの「おもてなし」の精神が求められているといえます。
"竹葉亭" at Kibikicho is a famous eel restaurant in Japan. And there is one private room in this restaurant. The customer is able to go through good Japanese garden to the room. Also, this room is designed based on traditional "茶室".
Of course, this private room is very expensive and rare. However, this is not always the best service for everyone. For example, there is no chair in this room because of traditional Japanese room. It is not comfortable for anyone who are not familiar with sitting on Tatami without chairs. In such a case, this service should be bad one for them rather than the best service.
This example insists that expensive or rare is not always the best service.
I read "炭屋 おもてなしはお茶の心で" a couple of years ago. This book introduces how "Omotenashi" is difficult. "Omotenashi" is Japanese traditional service policy.
In Japan, service professional always has to keep "Omotenashi" mind to provide better service to the customer.
