先日、久しぶりに Grand Gru Cafe を訪れました。プレゼント用に本とハーフボトルを頼んで、包んでもらっている間一服することにしたのですが、思えば珈琲も茶も非常によく似ている。そもそも、一服と言っている事自体、非常に茶を服する事と重なっているのではないだろうかと。考えてみれば、喫茶店で抹茶がなくとも珈琲はありますし、お茶でもしましょうと言って、紅茶を飲むことはあっても抹茶がすっと出てくる店は少ない。つまり、茶ということが、飲食物の茶そのものではなくて一連の文化的要素から来ているのだと考えると、珈琲というのは非常に茶事にみられる茶に近いものがあると感じます。
飲食物として
茶も珈琲も薬としての飲食物でしたが、いまでは嗜好品となっています。
飲食物としての背景や現在の要素を考えた時、両方共、歴史的には医薬品としての役割を果たしていましたが、時を経て今ではお手軽に口にすることができます。値段の幅も形式もいうなれば、真行草そろった飲食物となりました。
道具のあれこれ
抹茶を点てるとすると、少なくとも茶碗と茶筅があればなんとか形になります。これに、茶こしや茶杓などがあるともう少し格好がつきます。さらには、お釜や水差し、風炉にとなってくるときりがありませんが、とにかく幾つかの道具を使う事になるのは間違いありません。
同様に珈琲を飲もうと思ったら、カップとドリッパー、ペーパーフィルターがあれば、お店で挽いてもらった豆でいれることができます。ここに、ミルだのドリップ用のポットだのと用意していけば、こちらもきりはありません。
抹茶では、炉を切ったり、軸を用意したり香合などを揃える他に、実に多様な茶碗があります。同様に、珈琲もペーパードリップ、ネルドリップ、サイフォンと様々な方法でいれることができます。もちろんカップにこだわることもできます。
このように一服の茶、一杯の珈琲を飲むにあたり、実に多様な道具が用意されているところも特徴的です。
用意と片付け
茶も珈琲もある程度の準備と片付けを必要とします。
抹茶の粉をふるいにかけ釜でお湯をわかすように、珈琲豆を挽きお湯を沸かします。
共に沸騰していればよいわけでなく、ある程度さました適温があるところも面白い共通点です。
また、片付けも重要です。抹茶ではその手順すら厳しく決まっているように、道具をしっかりと洗い・拭き清めて片付けます。珈琲も厳しい手順こそありませんがなるべく早く道具を洗い片付けないと油や色素がこびりついてなかなか落ちなくなります。ネルなどは保存方法もあり、なかなか道具の片付けや手入れが重要になります。
ただ、入れて喫するだけでなくその前後の過程も重要なところにも共通するところがあります。
違いとして、技術と観想
ここで一つ、大きな違いについて触れておきたいと思います。
それは、珈琲は美味しく淹れることに重きをおくのに対し、茶ではテーマに重きが置かれることです。どちらが優れているということはありませんし、相容れることもあります。
珈琲ではいかに美味しく淹れることができるかという技術が大切で、日々練習したり工夫されているプロの方も多いです。実際に豆の粗さや淹れ方、お湯の温度などをかえて入れてみると味が違うことが歴然とわかります。もちろん、豆の種類や水の種類もしかりですが、ここでは茶と共通かと思います。

このように類似点と相違点を並べてみますと、2,3種類くらいの豆に季節柄を考えたもう一種類くらいを用意して、日々しっかりとテーマをもって、一組一組丁寧に珈琲を出せるような店がつくれないものかと思いました。庵を構えてお招きするのは仰々しいし、かといってただ黙々と美味しい珈琲をいれて出すだけでも味気なく。また、技術の高いお店はすでにいくつもありますし。嗜好品としての珈琲と、少しだけ囲われた時間を作れてもいいのかなと思います。
A couple of days ago, I visited "Grand Gru Cafe" at Roppongi. I ordered a book and half bottle beans for present. Then, I have a cup of coffee during a shop keeper wrapping them. By having a delicious drop in my mouse, I felt that there are some similar things between a tea and a coffee. Actually, we argued "一服 - Ippuku" when having a coffee and rest. Ippuku is used in 茶道 - Sado traditionally. By pursuing any other Japanese words, we are aware of using the word, 茶 - Cha, with cultural meaning, not a beverage. From this point of view, I consider that coffee has already been influenced by Sado culture in Japan.
Beverage
Both tea and coffee were medicine before, however, are preferable beverage now. As for reviewing their history, both of products were used as special medicine. Currently, however, we are able to have them easier and cheaper than before. There are variety range of prices and styles. Really, they are the beverage with 真行草.
Various Instruments
We are able to make 抹茶 - Matcha with a bowl and 茶筅 - Chasen at least. If you prepare 茶こし - Chakoshi and 茶杓 - Chashaku for making Matcha, you are able to make it well. In addition, you are able to prepare more instruments, however, there is no limit. Anyway, you have to use multiple instruments to make Matcha.
Similarly, you are able to make a coffee by preparing a cup and dripper. Also, there are various instruments to make a coffee as well.
Matcha has various instruments depending on the style. And a coffee has also various instruments depending on the method. For example, paper drip, knell, or Siphon.
As I described, to make a cup of coffee or tea, there are various instruments on both Matcha and a coffee.
Preparation and Clean up
Both 茶道 - Sado and a coffee requires preparation and cleaning up. We sift 抹茶 - Matcha powder and boil water in 釜 - Kama, like as graining coffee beans and boiling water in a pot. And interestingly, both of them requires controlling the temperature of water, not too hot. Also, the cleaning up is important as well. Sado decides the cleaning up process precisely. We have to wash and swipe to clean up instruments and room following the method. As of a coffee, while there is not a strict process how to clean up, the cleaning up is important because it is difficult to remove oil and color from instruments if we do not do soon after using those instruments. For example, cotton base instruments should be kept sousing in the water.
Differences - Skills and Contemplation
While there are a couple of similar things between a coffee and 茶道 - Ssdo, there is one remarkable differences. A coffee is set important how to make a delicious cups, on the other hand, 茶道 - Sado set its priority to themes. Of course, we cannot determine which one is better. And sometimes each of them requires the other specification vice versa in case.
The important things of a cup of coffee is a skill how well to pour a cup of coffee. Professionals improve and develop their skills in usual. In actual, its taste is changed depending on a grained beans size, pouring method, and temperature of hot water. On Sado, it always starts from what kind of themes set. All of other things, a bowl, cakes, painting/writing, and the brand of tea and water, are decided by themes. By hearing about it, someone assume it important to collect a various and lot of instruments. Of course, it is better if they have various instruments. However, it's not required. The most important thing is always to take care of the customers. Also, we have to collect information about the customers if we have not met to or are not familiar with them yet.
Proposal - Cafe
As comparing a coffee and 茶道 - Sado as above, I'm feeling better to establish the cafe which prepare a couple of brand beans, which has a themes every day, and whose staffs provide a cup of coffee and services to the customer politely. It's too serious to welcome at 庵 - Iori. Meanwhile, it's pretty insipid only to provide a delicious cup of coffee. Also, skillful cafes have been there. In my view, it would be good if there is the cafe provides a cup of coffee as preferable taste and closed precious time to the customer.
